Pineapple Upside Down Cake Jello Shots

Ingredients

3/4 cup (180 mL) boiling water
1 3-ounce box pineapple Jello gelatin
1/4 cup (60 mL) cold water
1/2 cup (120 mL) vodka
1/4 cup (60 mL) butterscotch schnapps
1/4 cup (60 mL) Irish cream

1. Dissolve the gelatin into the boiling water in a large bowl.

2. Measure and pour the schnapps, vodka, Irish cream, and cold water into the bowl. Thoroughly stir until well mixed. Allow the mixture to cool a little.

3. Add a maraschino cherry in plastic shot cups.

4. Carefully pour the Jello mixture over the cherries.

5. Chill in the refrigerator to allow the mixture to fully set and harden.
 
Serve and enjoy!

  7. Hmmm, I'll do it again this weekend. Post exactly what I used and see if maybe it's a difference of ingredients. Try leaving out the Irish Creme.

  10. Hey, a simple solution to the curdling alcohol....
    1. Mix all alcohol together in blender
    2. Then add to cooled jello mixture, QUICKLY!
    3. Pour into shot cups and refrigerate.
    FYI...When you add Baileys to other alcohol, it will curdle.

  11. Yeah, two batches and both curdle although that is floating to the top so it actually looks like a layer of cake but NOTHING like the photo.

  12. I made these as well....and it curdled. As soon as the irish cream hits the mixture it curdles....just like an irish car bomb.
