Yup. Fixed up a huge batch with smoked hocks and ham, two days prior. Beans get better with age. We have a New Years Day celebration here every year, with baby-back ribs, black-eyed peas, scorched cornbread (Tennessee recipe, Kenny), grilled chikin, and all the fixins you can imagine. With the leftovers, I won't have to cook until February.

Hope you and yours had a great end of year, and wishing all the best for the new year.

My Daddy was a southern boy from Mississippi. He said the tradition was, if you ate that good on New Year's day, you'd eat well all year long!
I had my black eyed peas, cooked with a little ham, cornbread and grilled catfish!

Mort, you might get a different view from some of those pea eaters from Georgia....I think Wm T originated "burn, baby, burn".....

Ate mine this year with pig knuckles.
Eat it while it's hot or the collagen gets things sticky.
