Texas Easter Eggs

Bacon-wrapped, cheese-stuffed jalapenos topped with guacamole.
Oh my.
 
 
First, you need one of these:
 
 
The pepper corer is truly one of the greatest inventions. Ever. The tray holds 36 peppers and works in the oven or on the grill. Core and clean the peppers, turning upside down to drain on paper towel. Stuff peppers with choice of grated cheese (can't beat cheddar jack), wrap the top with half slice of bacon, securing with toothpick through pepper, and set in the tray. Bake or grill, 350, for 20 to 25 minutes. Bacon crispy, cheese bubbly. You get the point. Top with a dollop of guacamole. Enjoy.
 
We just plowed through two trays of these puppies.

After two trays of these, gonna have to go to Costco and buy a bale of TP.
Is this an Easter tradition? Always find it interesting to hear what other parts of the Country partake in.

We had a redneck Easter feast. Smoked pork shoulder (Poppy), German potato salad, and black-eyed peas. Peach cobbler for dessert. The stuffed jalapenos are a whenever we feel like it thing.

On the grill at this moment a turkey. Some oysters right out the back yard. Or a mile down anyway.

Oh gawd!!!! I wish! Since they cut out the cancer in my toncil(spell?) I cant have any hot(habinaro) food. This has limited my Thi and Mexican intake to say the least. I miss Texas. I really REALLY miss Texas cooking. Ray

I make those all the time, but the Guacamole is great addition that I will have to incorporate into the mix the next go 'round!

I put them on hot grill so the bottoms of the peppers get charred...
